8 Oven Roasted South Indian Vegetables to Batch Cook and Freeze

These are the 8 South Indian veggie fries I batch cook and rotate from the freezer. All of them go in the oven. Most of them freeze. I make a different one each week and pull from the freezer for variety without cooking a fresh side dish every night.

Why These 8

I tested 10 South Indian veggie fries in the oven and tracked the nutrition for every single one. These 8 made the rotation because they all freeze well and work as hands-off oven recipes. The two that didn't make the list, spinach and beetroot, need the stovetop. Every other one goes straight in the oven.

Green beans won on fiber and protein. Eggplant was the biggest freezer surprise. No texture change at all. Potatoes need one trick: undercook them before freezing or they get rubbery.
