Air-Fried Zucchini, Peppers, and Onions is a quick, healthy, and flavorful side dish perfect for any meal. A great way to get more veggies into any meal.

Ingredients
 

  • 2 cups (196 g) zucchini - 1 big zucchini diced
  • 1 cup (119 g) green pepper - 1 green pepper chunks
  • 1 cup (110 g) onions - 1 medium onion big chunks
  • 1 teaspoon peanut oil
  • ½ teaspoon salt

Instructions
 

  • Prepare the Vegetables: Dice Zucchini, chop green peppers and onion.
    Freshly chopped zucchini, green peppers, and onions in a mixing bowl, ready for seasoning.
  • Preheat the air fryer to 400 °F
  • Mix all ingredients: In a mixing bowl, combine 2 cups zucchini, 1 cup green pepper, 1 cup onions, 1 teaspoon peanut oil, and ½ teaspoon salt.
    A bowl of zucchini, green peppers, and onions tossed with salt, pepper, and oil before air frying.
  • Air Fry the Vegetables for 20 minutes, turning the veggies halfway through to ensure even cooking.
    Zucchini, peppers, and onions spread in an air fryer basket, ready to be cooked to crispy perfection.
  • Transfer the air-fried vegetables to a serving dish and enjoy as a healthy side or snack.
