Cauliflower Vepudu Fry is a simple, flavorful South Indian stir-fry made with cauliflower, sautéed onions, and chili garlic seasoning. Perfect as a quick side dish for rice or rotis!
Prepare the Cauliflower: Wash the cauliflower thoroughly and cut it into small florets
Tempering: Heat ½ tablespoon oil in a pan over medium heat. Add ½ teaspoon cumin seeds, ½ teaspoon mustard seeds, ½ teaspoon urad dal, ½ teaspoon chana dal and let it splutter. Then add ½ teaspoon turmeric powder.
Saute Onions: Add chopped 1 medium onions and saute until golden brown
Cook the Cauliflower: Add the 1 head cauliflower florets to the pan and stir well. Sprinkle ½ teaspoon salt and cook for 5-7 minutes, stirring occasionally, until the florets are lightly browned.
Add Spice: Sprinkle ½ tablespoon red chili powder over the cauliflower and mix thoroughly. Cook for another 2-3 minutes, ensuring the spice coats the florets evenly.
Serve: Remove from heat and serve hot as a side dish with rice or rotis.
