Carrot Coconut Salad, or Carrot Kosambari, is a refreshing South Indian side dish combining sweet carrots, creamy coconut, and aromatic tempering for a burst of flavor and crunch.
Take a pan on the stove and temper with all the ingredients.
½ teaspoon peanut oil, ¼ teaspoon mustard seeds, ¼ teaspoon Chana dal, ¼ teaspoon cumin seeds, few fresh curry leaves
Add the termpering to grated carrot and coconut.
Add salt and pepper. Then mix everything.
