Let me tell you about one of my favorite quick meals or side dish. This spicy egg omelette has saved me on countless busy mornings. What I love most is how something so simple can be so satisfying. Just eggs, chili powder, salt, and a bit of oil or ghee - that's it!

Ingredients For Spicy Egg Omelette

Let's talk about what makes this omelette work:

  • Eggs - I use 2 large eggs for one serving.
  • Chili Powder - This is what makes this omelette special! The ½ teaspoon adds a wonderful warmth without overwhelming heat. If you're sensitive to spice, start with ¼ teaspoon.
  • Salt - Just ½ teaspoon to enhance all the flavors. Adjust according to your taste.
  • Oil or Ghee - I prefer ghee for its nutty flavor, but any cooking oil works great. You only need 1 teaspoon to prevent sticking and add a touch of richness.

How To Make Spicy Egg Omelette

  1. Crack 2 eggs into a bowl and whisk.

Cooking Tip

Medium heat is perfect. Too hot and the outside burns before the inside cooks; too low and the eggs become tough.

This recipe is beautifully simple when it comes to equipment too:

  • Spatula - Silicone works best for non-stick pans, while metal is fine for cast iron.
  • Mixing Bowl - Any small to medium bowl works fine.
  • Whisk or Fork - For beating those eggs to perfect fluffiness.
  • Non-stick Pan or Cast Iron Skillet - A 6-8 inch pan is ideal for 2 eggs. Cast iron creates a beautiful crust but requires proper preheating.

Storage

While omelettes are best enjoyed fresh, sometimes you need to save time with meal prep:

  • Meal Prep: You can whisk the eggs with spices the night before and store covered in the refrigerator. Just cook in the morning for a fresh omelette.
  • Refrigerator: You can store the cooked omelette in an airtight container for up to 2 days.
  • Reheating: The best way to reheat is in a pan over low heat for 1-2 minutes per side. Microwaving works in a pinch (30 seconds), but the texture won't be as good.

Top Tip

Adding salt right before cooking (rather than letting salted eggs sit) keeps the texture better.

How do I prevent my omelette from sticking to the pan?

What's the best way to flip an omelette without breaking it?

Let the omelette cook until it's set around the edges and partially set in the center. Use a wide spatula and a quick, confident motion to flip it in one piece.
