Is there anything better than a meal that just hits after a long day? For me, that's often my Methi Paneer Stir Fry. I love it because it’s got that creamy, protein-packed paneer, but then you get to stir in fresh methi (fenugreek leaves). It adds this amazing, slightly bitter flavor that just makes the whole dish pop and feel a bit more balanced with some greens. It's truly a satisfying meal, and a favorite in my kitchen!

You won't need a lot of fancy gadgets for this one, just the basics:

  • Spatula or Wooden Spoon: For stirring everything together.
  • Large Skillet or Wok: For all the stir-frying action.
  • Chopping Board and Knife: For prepping your veggies and paneer.

  • Store any leftover Methi Paneer Stir Fry in an airtight container in the refrigerator for up to 3-4 days.
  • Reheat gently on the stovetop over medium heat, or in the microwave, until warmed through. You might add a tiny splash of water if it seems a bit dry.

Top Tip

Don't overcook the methi! Those fresh leaves cook down pretty quickly, usually in just 3-4 minutes. If you cook them too long, they can lose their vibrant color and some of their unique flavor. You want them wilted but still bright.

FAQ to make Methi Paneer Stir Fry,

Can I use frozen methi leaves?

Yes, you can! If using frozen methi leaves, thaw them first and squeeze out any excess water before adding them to the pan. They might cook down a little faster than fresh ones.

How can I make this spicier?

Easy! Increase the amount of red chili powder to your liking. You could also add a finely chopped green chili along with the onions for an extra kick.

What goes well with Methi Paneer Stir Fry?

This dish is super versatile! It's delicious with warm rotis, naan, or parathas. It also pairs wonderfully with a simple bowl of steamed basmati rice or brown rice.

Ingredients
 

For Stir Fry:

  • 2 cups (250 g) fresh methi leaves - washed and chopped
  • 1 tablespoon oil
  • 1 lb paneer - cubes lightly sautéed or raw
  • 1 onion - sliced
  • 1 teaspoon cumin seeds - optional
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon coriander powder
  • ¼ teaspoon cumin powder
  • ½ teaspoon salt - adjust to taste

Instructions
 

Prepare the Base:

  • Heat 1 tablespoon oil in a pan. Add 1 teaspoon cumin seeds and let them splutter.
  • Add 1 lb paneer and slightly fry it.
  • Add 1 onion and sauté until translucent.

Add Methi and Spices:

  • Add 2 cups fresh methi leaves and sauté for 3-4 minutes until wilted.
  • Then add ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, ½ teaspoon coriander powder, ¼ teaspoon cumin powder and ½ teaspoon salt. Mix well.
