For Egg Bhurji:

  • ¼ cup onion - finely chopped
  • 1 green chilies - chopped
  • ½ teaspoon salt - adjust to taste
  • 2 eggs - whisked
  • 1 tablespoon cilantro - chopped (optional)

For Tempering

  • 1 teaspoon oil or ghee
  • ¼ teaspoon mustard seeds
  • ½ teaspoon urad dal
  • ½ teaspoon cumin seeds
  • ½ teaspoon chana dal

Instructions
 

Cook the Base:

  • Heati 1 teaspoon oil or ghee in a pan. Add ¼ teaspoon mustard seeds, ½ teaspoon urad dal, ½ teaspoon cumin seeds, and ½ teaspoon chana dal
